Paleo Cranberry Orange Scones (GF)
•1 ¼ Cup Almond Flour (superfine)
• ¼ Cup Tapioca Starch
• ¼ Cup Coconut Oil (softened)
• ¼ Cup Maple Syrup
• 1 Egg (beaten)
• ½ Cup Fresh Cranberries
• 1 Tbsp Orange Juice
• 1-2 Tbsp Orange Zest
• ¼ Tsp Baking Soda
• 1 Tbsp Melted Butter (for topping)
Directions:
• Preheat Oven to 350 degrees
• Mix almond flour, tapioca starch and baking soda, orange zest and cranberries in a large bowl.
• In a small bowl whisk together coconut oil, maple syrup, 1 beaten egg, and orange juice
• Combine wet and dry ingredients and mix well. You may need to add additional almond flour, do so 1-2 tbsp at a time.
• Once dough is thoroughly combined place it on parchment lined baking sheet and use pizza cutter to cut triangles
• Slightly separate and bake for 20-30 minutes
*Optional - Brush with butter or coconut oil
Tomato Bruschetta Appetizer
• 3-4 large tomatoes (Roma)
• 1-2 small shallots
• 3 cloves garlic
• 1 Tb olive oil
• 2 ½ Tb balsamic vinegar
• 2 Tb fresh basil (chopped)
• Salt & Pepper to taste
• Serve on crostini or cucumber
Directions
• Dice tomatoes, onions, and garlic
• Add Balsamic vinegar, oil and chopped basil leaves. Mix well.
• Taste and season with salt and pepper as desired
• Serve on toasted gluten free bread or cucumber
*Optional Additions - prosciutto, fetta cheese spread or hummus
