Guidelines
1. True chili is defined as any kind of meat or combination of meats cooked with chili peppers, various spices, and other ingredients. Variety Entries are encouraged – meatless, spicy, white, or surprise ingredient.
2. All ingredients must be pre-cooked prior to the event – chili and/or cornbread is to arrive ready to eat. Plan to have your entry ready by 12:00 PM in the Fellowship Hall - please contact the office if you need to drop it off sooner.
3. Contestants are responsible for supplying all of their own serving utensils and products related to their submission and maintenance of its proper temperature for serving. An electrical outlet will be available for each entry, and a crockpot is recommended. Spoons, bowls, and plates for use in serving chili and cornbread will be provided.
4. The decision of the judges is final. Judging will be based on score cards which are numbered.
5. If chili is hot to the point of burning your mouth, please notify on registration so that a “HOT” sign will be included with your chili. Please no ghost peppers.
6. Please provide a list of ingredients for the church office in case of any questions about allergens.
7. Chili and cornbread will be assigned a number once registered for blind judging, so judges do not know who created the dish.
Judging
The chili and cornbread will be blind judged (no one knows the identity of the cook), and scorecards will be based on the following five characteristics:
1. Texture: texture of the chili is not too tough or mushy, and texture of the cornbread is not too dry or moist
2. Flavor: this will be personal preference of the judge for both chili and cornbread
3. Consistency: chili should be a smooth combination of meat choice and other ingredients and not too thin or too thick. Cornbread should not be too hard on the bottom or too soft in the middle
4. Aroma: this will be personal preference of the judge for both chili and cornbread
5. Visual Appeal: the chili and the cornbread should look appetizing and desirable to eat
